Grandma's Lemonade

Everyone asks for this recipe at one time or another. In summer it's the most refreshing drink available. "The only way to drink water," according to Dimitri... And in mid-winter when you have a cold, mixed with hot water and honey (and possibly some brandy) it's soothing and energy-giving.

 

Ingredients:

  • 2 lemons, peeled and juiced
  • 2 oz citric acid
  • 3 lb sugar
  • 3 pints of water

 

Peel the lemons using a potato peeler so that you obtain thin slices of rind without any pith.

 

Squeeze the 2 lemons.

 

Bring water to the boil in a large saucepan and stir in all the ingredients. Stir frequently to avoid the sugar sticking to the pan. When the mix returns to the boil, keep it boiling for 2 minutes and then remove from the heat and cover until it is cool.

 

Pour into bottles when it's cold.

 

The concentrate can be kept for quite a while - keep it in the fridge if the weather's really hot; this delays the onset of a harmless precipitate in the bottle.

For those of you who prefer big quantities and, as they say "have the metric system so wouldn't quite know what a quarter pounder is....", here are easy to remember quantities in litres and grammes:

 

  • 5 lemons
  • 125g citric acid
  • 3 kg sugar
  • 3 litres water
