Red Cabbage with Raisins
This sweet and sour dish is easy to prepare and accompanies a poultry, beef or strong fish main course.
- 1 red cabbage
- 2 onions
- 2 chopped cooking apples (or sharp, tart apples)
- lemon juice
- 100g raisins (soak in water before use)
- 1 spoon of sugar
Saute the onions in a mix of vegetable oil & butter, then add the chopped cabbage, chopped cooking apple, lemon juice, brown sugar and raisins.
Cover the saucepan with a lid and cook slowly until all the ingredients soften. You will need to cook for at least 40 minutes and the cabbage will reduce quite considerably.
You may add pepper to taste. This dish really needs to be cooked before use. i.e. on the morning of intended use or, even better, the day before.
